Café Villa Florida (Caviflor)
— La Paz · Montecillos

This lot comes from farms in the La Paz department in south-western Honduras, near the Montecillos reserve. The Lenca people call this mountainous, jungle-covered area "the place of stone". The soils are fertile and the climate mild.

The trees grow mostly in the shade of banana palms and get little direct sun, so they bear less fruit, but with a richer and more interesting cup. Montecillos was the first area in Honduras to receive a protected designation of origin (Café de Marcala). The coffee is exported by Café Villa Florida (Caviflor), founded 40 years ago in Marcala.

Le processus

Washed
par intention.

The harvest is fully hand-picked. Only ripe cherries are used, so they are sorted again in water tanks and depulped.

The beans ferment under water for 60 hours, are washed and then dried in drying cabinets down to 10–12% moisture. The coffee then rests for up to two months to stabilise its moisture.
