From the farm

Jaime Morales Milián · El Mirador
— Baja Verapaz · Rabinal

In the highlands of Baja Verapaz, among cloud forests and fertile volcanic-limestone soils, Jaime Morales Milián grows Maragogype, a rare variety known for its large beans and refined cup. The cool climate and altitudes of up to 1,800 metres slow ripening, so the beans build more natural sweetness and bright fruit aroma.

The El Mirador farm is part of a region where generations of local producers combine traditional growing with modern quality control.

The process

Lavé
by design.

The cherries are hand-picked, selecting only ripe fruit, and are sorted within 12–15 hours. The coffee is then depulped and fermented for about 24 hours using the classic washed method.

After washing, the beans are dried on raised African beds for about 10 days, which highlights the clean cup, natural sweetness, and expressive fruit acidity of Maragogype.
